Pumpkin Roll Recipe ~

For the last 8 years my friends and I have religiously reserved a night in November to make pumpkin rolls.  The process of making Pumpkin Rolls is NOT an easy task & not a recipe one can make alone.  You need friends, snacks & wine.  Once made though they make your life easier.  Pull one out of the freezer, hop in the car and go to that Holiday party, Thanksgiving dinner or hanging with some friends.   

This year we had a real treat because my sister recently purchased a home with DOUBLE OVENS!  What usually takes us 4-5 hours (we make around 20) was done in 3 this year leaving us more time to hang out, catch up & partake in our newly baked goodies. 

Below is the actual Pumpkin Roll recipe & some pictures of this years event.  We make a mess but the outcome is worth it and everyone loves our Pumpkin Rolls.   

Pumpkin Roll Recipe:  

  • 3 Eggs
  • 1 cup Sugar
  • 2/3 cup Pumpkin
  • 3/4 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 2 teaspoons Cinnamon  
  • 1/2 teaspoon Salt

Filling:

  • 8 ounces Cream cheese -- softened
  • 4 tablespoons Butter -- or margarine
  • 1 cup Powdered sugar
  • 1/2 teaspoon Vanilla

Preparation:

in large bowl, combine eggs and sugar, beating well. Add pumpkin, mixing until blended.   In separate bowl, combine flour, baking powder, and salt. Add to egg mixture, mixing well. Spread batter into greased and waxed-paper lined 10-by-15-inch jelly-roll pan.

Bake at 350 ° for 15 minutes. Remove from oven. Cool for 15 minutes. Place cake on clean tea towel sprinkled liberally with powdered sugar. Cool 10 minutes longer. From 10- inch side, roll cake up in towel. Set aside.   While cake is cooling in towel, prepare filling. Beat together cream cheese and butter; stir in powdered sugar and vanilla and blend until smooth.
Unroll cake. Evenly spread filling over cake. Roll up cake (without the towel). Wrap in plastic wrap. Cover and chill at least 1 hour. Slice before serving. Keep leftover slices refrigerated. This pumpkin roll freezes well.

Hey Kristin - I've bookmarked this post.  Looks yummy.  How about posting a pic of the finished product?  Is the recipe for one roll?  What's the consistency of the batter?  Am I being a pain?  :-)

Sandy - ;).  HA!  Yes, the recipe is for one roll.  We split up the ingredients & figure out how many eggs, flour, etc.  IT'S quite the TASK!  The consistency of the batter is like a cake batter, you spread it evenly on the wax paper in the cookie sheet.  FINAL PRODUCT! I will work on that picture for you!  KM

Hi Kristin, Your pumpkin rolls sound really delicious.  I'll bet "y'all" get a lot of oohs and aahs over these.  By the way, I notice that one of your pictures has orbs in it.  "orbs" in photos has been a subject here in the rain.

Thanks for the pic, Kristin - looks really yummy!  I've already copied and printed the recipe.  I will be making two of them.  Will let you know how it turns out.  :-) 

Just one  more question - when you roll it up with the towel, do you roll it so that the towel is rolled with the cake?  Kind of like where the icing would be?  In other words, you don't roll the cake just by itself and then roll it in the towel - right?  I hope that made sense . . .:-/

Connie - You said it lady!  It breaks & you have to repair it!  It's all good though when it's frozen!

Russell- Trust me...it's delicious w/margaritas :).

SP - Oh! They are all gone already ;).  Just kidding.

Sandy - You want me to come over and make them with yoU?  ;0.  You roll it up w/the towel originally so it can cool (maybe 15-20 mins) SO, you grab the slightly hot cake place it on the towel (sprinkle some powdered sugar so it doesn't stick) and roll them both up together -make sense?  Then you unroll it (after it's completely cool) put the icing in it and re-roll it WITHOUT the towel and then put it in wax paper and aluminum foil.  We use the wax paper first (less sticky) and then wrap it again w/the aluminum foil and then FREEZE IT!

I made some of these, but I should have used a larger pan because I only got about three turns before I reached the end.  Next time I will ignore the instructions from the recipe on the can and use a cookie sheet.
